All right guys!!!! I am super excited to share this recipe with you all. I love Lasagnas. Now everyone has a way to make it I have one too. 🙂 I am using white sauce over here instead of ricotta cheese and I am adding veggies to this. If you guys are not big fans of veggies, I promise this recipe will make you one! Hope you guys enjoy this flavorful recipe.  Please don’t forget to tag me at @spizerita

VEGGIE LASAGNA

Prep Time: 20 mins | Cook Time: 35 mins | Total Time: 55 mins | Serves: 4

Ingredients:

  • 12 Lasagna sheets
  • 1 cup finely chopped mix bell peppers (red, yellow, green)
  • 1 ½ tsp Olive oil
  • ½ cup chopped zucchini
  • ¼ cup corn (I used frozen, thawed)
  • ¼ cup chopped French beans
  • ¼ cup chopped mushrooms
  • 1tbsp roughly chopped basil
  • Salt to taste.
  • Shredded Mozzarella cheese 

Pasta Sauce:

  • 2 ½ cups Red pasta sauce
  • 1 cup canned/cooked kidney beans

White sauce:

  • 2 ½ cups milk
  • 1 ½ tbsp Corn starch
  • 1 tsp Chili flakes
  • 1 tsp Oregano
  • 1 tsp Italian seasoning
  • Salt to taste
  • 1 tbsp butter

Directions:

  1. Heat the milk and Pasta sauce in different pots.
  2. To the milk, add the butter, cornstarch and stir well. Cook on low heat. stir it frequently to avoid lumps in it.
  3. Add the kidney beans to the red pasta sauce and heat for about 3-5 mins.
  4. While the white sauce is cooking, take a pan and heat Olive oil. 
  5. Once the oil is hot, add in the mixed bell peppers and cook for a minute. Add a pinch of salt. Add in the zucchini. Cook for ½ minute. Add the French beans to the veggies. Add the mushrooms and corn. Cook for 2 mins and turn the heat off.
  6. Once the white sauce thickens, add oregano, chili flakes, Italian seasoning, and salt. Stir. Add the veggies to the white sauce.
  7. Preheat oven to 400°F. 
  8. Take a greased baking pan. (9X9) 
  9. Spread some red pasta sauce. Place 2 pasta sheets. (vertical)
  10. Now pour some red pasta sauce over. Sprinkle some cheeses.
  11. Put 2 pasta sheets over (horizontal). Pour some white pasta sauce.
  12. Place 2 pasta sheets (vertical) and pour red sauce. Sprinkle some cheese.
  13. Now repeat the steps to place the pasta sheets and sauce. (you basically layer one with red sauce and then another with white).
  14. For the last layer, pour the white sauce on the pasta sheets.  Add the chopped basil and sprinkle some cheese.
  15. Cover the pan with foil and bake in the oven for 20-22 mins.
  16. Once the Lasagna is cooked. Take the pan out of the oven and let it cool for some time.
  17. Cut into 4 big pieces and serve it on the plate. Enjoy it with garlic bread!

Notes:

  • I used Preggo Roasted garlic sauce
  • I used Oven ready Lasagna sheets.
  • You can use canned kidney beans or cook them.
  • you can use any veggies of your choice.
