BOMBAY TOAST SANDWICH
Mumbai is famous for its street food. I studied in Mumbai and my lunches mostly were the Bombay toast sandwich or the aloo toast sandwich! Oh! how I miss Sandwizzaa’s aloo toast sandwich… If you go to Mumbai, you must try the sandwiches at Sandwizza.
Every time I go to Mumbai, toast sandwich is a must-have for me. Here I am bringing you my take on the Bombay toast sandwich. It is a perfect go to for a weekend dinner…. Hope you all like it!

Ingredients:
- 8 slices of bread
- 1 tomato sliced
- 1 onion sliced
- 1 green bell pepper sliced
- ¼ cup cilantro chutney
- 4 Slices of Amul Cheese
- Aloo Filling
- Garlic Butter
- Sandwich masala for sprinkling
Garlic Butter:
- ¼ cup Amul Butter/Smart balance original butter spread
- ½ tsp fresh crushed garlic
- ½ tsp oregano
- 1 tsp chili flakes
- 1 tsp Italian herbs
Cilantro Chutney (This is made in bulk and can be stored):
- 3 Bunches Cilantro
- ½ cup Sev (I used Garvi Gujarat Bhel Sev)
- 6 garlic cloves (peeled)
- 10 Thai chilies
- ½ inch ginger root (peeled)
- 2 tbsps lemon juice
- ½ tsp cumin seeds
- Salt to taste
- Water as needed
Aloo Filling:
- 2 potatoes (boiled & mashed)
- 1tsp oil
- ¼ cup finely chopped onions
- ¼ cup chopped cilantro
- ½ tsp of ginger paste
- 1 tsp of garlic paste
- ½ tsp of green chili paste
- ½ tsp of Amchur (Dry Mango Powder)
- ½ tsp of Sanchar/Kala namak powder
- 1tsp of chaat masala
- 1 tsp Kitchen King Masala
- ½ tsp of lemon juice
- Salt to taste
Directions:
Garlic butter:
- Mix all the ingredients together in a bowl and keep it aside.
Cilantro Chutney:
- Add all the ingredients into the blender and blend into a smooth paste. Add water as needed.
- Transfer the chutney to a bowl and enjoy.
- You can store the extra batch in the freezer
Aloo Filling:
- Heat a pan and add oil.
- Add the ginger, garlic, and green chili pastes. Sauté for a minute
- Add in the chopped onions and sauté till translucent.
- Now add Amchur, Chaat masala, Kitchen king masala, Sanchar, and salt. Mix well.
- Add the mashed potatoes and mix everything well. Turn the flame off.
- Add the lemon juice and cilantro and mix well. Set the mixture aside.
Assembling:
- Take 2 slices of bread and cut the crust off.
- Spread the garlic butter on the bread and then spread the cilantro chutney.
- Sprinkle some Sandwich masala
- On one slice of bread, put 1 slice of bell pepper, onion and tomato each. Now sprinkle some more sandwich masala.
- Now put a spoonful of Aloo filling and sprinkle some more sandwich masala.
- Put a slice of Amul cheese.
- Now Put the 2nd slice of bread on top. spread some butter on the top side of the bread and toast it in a stovetop toaster or panini press till toasted.
- Once done, take them out, spread some more butter, sprinkle some chaat masala and cut the sandwich diagonally, and enjoy with some Ketchup and chutney on side!
Notes:
- I used pepperidge farm sandwich bread.
- I used Spicezzaa Sandwich masala. You can find them at most of Indian grocery stores. I bought mine from Patel Brothers.
- I used Badshah Kitchen king masala
- For toasting, I used a Stovetop toaster which I bought from India. You can use a panini press or a grill.
- I make the cilantro chutney in bulk so the measurements are for a bulk quantity. You can freeze the extra chutney in an ice tray and store those in a zip lock.
