SEV BARFI

Happy Holi!!!! Holi is celebrated for 2 days. The first evening is known as Holika Dahan (burning of demon Holika) or Chhoti Holi and the following day as Holi, Rangwali Holi, Dol Purnima, Dhuleti, Dhulandi. Every year my baa makes this sev for holi. Traditionally we boil the sev (like noodles) and then add ghee & sugar and eat… My Nani used to make sev barfis and we would dive right into these… So, on this auspicious day of Holi, I wanted to share this family recipe with you all!

Prep Time: 5 mins | Cook Time: 10 mins | Total Time: 15 mins | Yields: 6 Barfis

Ingredients:

  • 1 cup whole wheat sev
  • ½ cup confectionery sugar
  • ½ cup + ¼ cup water
  • 2 tbsp ghee
  • 1/4tsp + pinch of cardamom powder
  • Sliced almonds for garnish

Directions:

  1. Take water in a pot and put it on medium heat.
  2. Now in a pan, add ghee. Once the ghee is hot, add the wheat sev and roast on medium flame till it is golden brown. (make sure it is roasted well depending on the thickness of the sev)
  3. Now slowly start adding the hot water. Start with ½ cup and then add the remaining and stir. Add the sugar and a pinch of cardamom powder and keep stirring till the water is evaporated.
  4. Now take silicon cupcake molds and transfer the mixture in them. Press the sev well for it to set. Now sprinkle some more cardamom powder and garnish with sliced almonds.
  5. Set them aside till they cool down. Once the barfi is set you can transfer them into a serving tray or a box and enjoy them with your family and friends! Happy Holi!!!

Notes:

  • I got the wheat sev (ghav ni sev) from the Indian grocery store. 
  • I used silicon molds, but you can also put these on a plate and cut them into square pieces. 
  • You can garnish them with any nuts of your choice. 
  • You can store them for a week.
