DIL-E-CUTLET

Have you ever traveled on a train in India? As a kid, every summer I would go to Anand from Mumbai for my summer break. Most of the time we would travel by car but sometimes, we would go by train, Shatabdi, or Karnavati Express. When we would go by train, we would always buy cutlets or bread cutlets. This recipe will take you down the memory lane I went through when I made these. I hope you guys enjoy these as much as I did. Please don’t forget to tag me  @spizerita when you make them. 🙂

Prep Time: 30 mins | Cook Time: 25 mins | Total Time: 55mins | Serves: 24 Cutlets  

Ingredients:

  • 3 cups boiled and mashed potatoes 
  • ¾ cup diced carrots 
  • ¾ cups diced and boiled beets 
  • ¾ cups peas 
  • 1/3 cup chopped French beans 
  • 4 green chilis (crushed) 
  • ½ cup thick poha 
  • Salt to taste 
  • 1 tbsp sugar 
  • 1 tbsp lemon juice 
  • ½ tbsp garam masala
  • Rice flour as needed 
  • Milk as needed 
  • Breadcrumbs as needed 
  • Oil to fry  

Directions: 

  1. First boil carrots, peas, and French beans and keep them aside. 
  2. Now in a large mixing bowl, add the mashed potatoes, the veggies, and poha. 
  3. Add sugar, salt, lemon juice, crushed green chilies, and garam masala. 
  4. Mix everything till all ingredients are blended well. 
  5. Now shape the cutlet with heart shape cutter. 
  6. Heat oil in a wok or kadhai. 
  7. Take 3 shallow dishes. Add rice flour in one, milk in the other, and breadcrumbs in the 3rd one. Now take the cutlet and roll it in rice flour first. Then dip it in milk and then coat it in breadcrumbs and keep it aside. Repeat for all cutlets. 
  8. Once the oil is hot, fry the cutlets till they are golden – brown or crispy.  
  9. Serve them with ketchup or chutney. Or how I like it: I take 2 slices of bread, spread butter and ketchup on them, put the cutlet in between and enjoy my cutlet sandwich.  

Notes: 

  • I used plain Panko breadcrumbs.  
  • If you don’t like breadcrumbs, you can use Sooji/Rava 
  • I used Swad Thick poha. You can get them at Patel brothers or any other Indian grocery store.
  • You can use Maida or All-purpose flour instead of rice flour.
