Mixed Nuts Chikki (Brittle)

A new day, new month, new year. Happy New Year all! Why not start our new year with something sweet? Growing up, whenever we would start something new or even go for an exam, buy a new car, my baa (grandmother) would always make something sweet. Today I am starting a new chapter in my life and bringing my passion for food to you all! Welcome to my world of recipes!!!

Mixed Nut Chikki is like a brittle. Growing up, every year during Makar Sankranti, my baa used to make different varieties of Chikki. Recreating this recipe took me back to my childhood days when every year on Jan 14th we used to rush to our terraces in the morning to fly kites and eat Chikki all day. This is an easy recipe made with very few ingredients.

Since we all are about eating healthy, I wanted to recreate this recipe with a healthy twist. hope you enjoy them as much as I did! Nom! Nom! Nom!

Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins | Makes: 15-20 pieces

Ingredients:

  • 1 cup chopped nuts (I used Almond, Cashews and Walnuts)
  • 1/2 Cup Agave Nectar Syrup 
  • 1/2 tbsp Coconut oil (I used the cold pressed coconut oil)

Directions:

  1. Dry roast the chopped nuts in a pan for 4-5 mins on a medium flame and then transfer them to a plate.
  2. In the same pan, add the agave syrup and coconut oil and cook on low heat.
  3. The syrup will start to bubble. Let it boil till it reaches 260 degrees Fahrenheit.
  4. Once it reaches 260 degrees F, add the nuts and mix.
  5. Mix till the nuts are coated well in sugar syrup.
  6. Transfer the mixture into a pan lined with parchment paper. (you can choose the pan based on thickness you would like to have for your Chikki).
  7. Let it cool and you can break them into pieces and store them in airtight containers and enjoy!

Notes:

  • You can use honey if you don’t like Agave.

  • You can use any nuts (pecans go really well too).

  • I used Nutiva organic coconut oil.

  • It is very important to cook the syrup on a low flame.
