PALAK KOFTA CURRY

My two Favorite curries are Malai Kofta and Palak Paneer. So here I combined the two and made Palak Kofta Curry. And to add a healthy twist… I air-fried my Koftas… This recipe is very simple. I hope you guys like it as much as I do!

Prep Time: 10 mins | Cook Time: 45 mins | Total Time: 55 mins | Yields: 4 Servings

Ingredients:

Gravy:

  • 1 large onion (cut in big chunks)
  • 1 large tomato (cut in big chunks)
  • 1 cup cilantro (whole)
  • ½ inch ginger root
  • 5 Garlic Cloves
  • 3 green chilis
  • 2 cups baby spinach (blanched)
  • 2 tbsp oil
  • 1 Bay leaf
  • 2 green cardamom pods
  • 1 inch piece of cinnamon
  • 2 tbsps. yogurt
  • 1tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ¼ tsp turmeric powder
  • 1 tsp Badshah Kitchen King Masala
  • Salt to taste
  • Water (if needed.)

Kofta:

  • 2 potatoes (boiled & mashed)
  • ½ cup grated paneer
  • ¼ cup Carrots finely chopped
  • ¼ cup French beans (finely chopped)
  • ¼ cup peas
  • 1/3 cup finely chopped onions
  • 1/3 cup chopped cilantro
  • ½ tsp garam masala
  • ½ tsp ghee
  • Salt to taste.
  • Oil to brush the koftas. (if you are frying, then oil for frying)

Directions:

Kofta:

  1. Add salt to the mashed potatoes and set aside.
  2. In a small pan, heat ½ tsp of ghee. Add onions and sauté till translucent. Transfer in a bowl.
    In a microwave-safe bowl, add the carrots, French beans, and peas. Add water and cook them for 2mins. Drain and add the veggies to the bowl with onions. In the same bowl, add the paneer, cilantro, salt, and garam masala and mix.
  3. Now take a scoop of mashed potatoes and flatten it. Now take a spoonful of the paneer mixture and place it on the flattened potato. Now seal the stuffing (the same way we do for a stuffed paratha).
  4. Place the kofta in the air fryer tray and brush them with some oil. Set the air fryer on fries mode and cook for about 25 minutes and set aside.

Gravy:

  1. In a pan, add 1tbsp of oil. Keep the flame on medium-low. Add the onions. Sauté for a min. 
  2. Now add garlic and ginger and cook for a minute. 
  3. Add in the tomatoes and cook for 2 mins. Add cilantro and cook for 2-3 mins and turn the flame off.
  4. Once the mixture is cool, transfer it to a blender. Add the blanched spinach and puree everything into a smooth consistency.
  5. Now heat 1tbsp of oil and add the bay leaf, cinnamon, and green cardamom. Cook till fragrant and take them out. 
  6. Now in the same pan add your puree. Keep the flame on low. 
  7. Add turmeric powder, red chili powder, cumin powder, coriander powder, and Kitchen king masala and salt. Cook for about 5 mins. 
  8. Now stir in the yogurt and cook for 2 mins. Add water if need. Turn the flame off.
  9. Now take a bowl and transfer the gravy in it and place the koftas and enjoy with some hot naan or rumali roti or even a phulka. 

Notes:

  • I used Amul malai paneer.
  • You can use regular spinach too. I used Baby spinach since it takes less time to cook/blanch.
  • I eat my Palak koftas with Vadilal rumali roti. 🙂
